Thanksgiving Cracker Toffee

This is the best Thanksgiving cracker toffee! It's buttery, toffee covered crackers, topped with a layer of chocolate, spiced apples, streusel and pecans!

Thanksgiving cracker toffee is the Thanksgiving equivalent of "Christmas crack". Like traditional Christmas crack, this is made of a layer of Ritz crackers topped with homemade toffee and chocolate. Where this turns into a Thanksgiving treat, is that it also gets topped with spiced apples, crunchy streusel and pecans. It's like cracker toffee topped with the best parts of apple and pecan pie! It's super easy to make and so delicious. This is the perfect sweet treat to make for everyone to munch on while Thanksgiving dinner is cooking, and I know you won't be able to resist it! This stuff is addicting!

It's an easy recipe. Just an handful of ingredients, a few simple steps, and you'll have yourself the best cracker toffee candy!

It's the perfect Thanksgiving snack. A sweet and salty treat perfect for a special occasion!

It's a super, super delicious treat. Crunch, salty crackers topped with toffee, a layer of melted semi-sweet chocolate chips, spiced apples, crunchy streusel and pecans. What could be better?!

Simple Ingredients

  • Crackers- Ritz crackers or saltine crackers both work well
  • Brown Sugar- used to make the buttery toffee layer
  • Butter- used to make the toffee and streusel topping
  • Vanilla- adds a sweet note to the toffee
  • Chocolate- semisweet chocolate chips work well, but you can also use milk chocolate chips
  • Apples- I recommend honeycrisp or something similar
  • Granulated White Sugar- used to sweeten the apples
  • Spices- cinnamon, nutmeg, allspice, ginger and cloves add warm fall flavor to the Ritz cracker toffee
  • Flour- used to make the streusel topping
  • Pecans- I like using whole pecans, but you can also you chopped

Step by Step Instructions

STEP ONE: Add the chopped apples, sugar and spices to a small saucepan. Heat over medium-low heat until the apples are tender stirring occasionally, about 15-20 minutes. Then let cool completely.

STEP TWO: Add the flour, brown sugar and butter to a small bowl. Smoosh everything together with your fingers until the mixture forms small crumbles. Transfer the streusel topping to a small parchment paper lined baking sheet and bake until golden brown. Then let cool completely.

STEP THREE: Line a large sheet pan with parchment paper and lightly spray with nonstick cooking spray. Arrange the crackers on the baking sheet.

STEP FOUR: Add the butter, brown sugar and vanilla to a small pot. Heat over medium heat until simmering. Simmer for 5 minutes.

STEP FIVE: Pour the brown sugar mixture over the crackers and spread it in an even layer with a mini offset spatula. Bake the toffee covered crackers for 5 minutes in the oven.

STEP SIX: Remove from the oven and sprinkle chocolate chips over the crackers. Return to the oven and bake for 3 minutes, or until all the chocolate is melted. Spread the chocolate evenly across the crackers in a single layer with a mini offset spatula.

STEP SEVEN: Sprinkle the cooled apples, streusel and pecans over the melted chocolate layer. Then place in the fridge for 30 minutes, or until the chocolate and toffee are hardened.

STEP EIGHT: Drizzle melted chocolate over everything and return to the fridge for 5-10 minutes until the chocolate is set. Then cut or break apart the cracker toffee into smaller pieces. (I like to do 3-4 inch pieces, but you can also break it into bite-sized pieces if you want!) Then serve!

FAQs

How do I store this? It's best stored in Ziploc bags or an airtight container in the fridge or freezer. I actually prefer it cold than room temperature! It'll stay fresh for about 1 week in the fridge or two weeks in the freezer.

Do I have to top it with the toppings? No! If you want to make this just a traditional Christmas crack, leave off the apples, streusel and pecans!

Can I use a different cracker? Yes. Try saltines or even graham crackers!

Pro Tips

Let the cracker toffee cool in the fridge until the toffee and chocolate are completely hardened to avoid a chewy cracker toffee.

Let the toffee simmer for 5 minutes so it reaches the perfect consistency.

Ingredients
 

For the Spiced Apples

  • 1 ½ cups (210 g) apples peeled and diced into ¼ inch pieces
  • 2 tablespoon (25 g) granulated white sugar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon allspice
  • ⅛ teaspoon ground ginger
  • pinch cloves

For the Streusel

  • ¼ cup (31 g) all-purpose flour, spooned and leveled
  • ¼ cup (55 g) brown sugar, packed
  • 2 tablespoon salted butter

For the Cracker Toffee

  • 48 Ritz crackers
  • 1 cup (224 g) salted butter
  • 1 cup (220 g) brown sugar, packed
  • 1 teaspoon vanilla
  • 2 ½ cups (500 g) semi-sweet chocolate chips
  • ¾ cup (84 g) whole pecans
  • ¼ cup (50 g) semi-sweet chocolate chips, melted for drizzling over finished cracker toffee

Instructions
 

For th Spiced Apples

  • Add the chopped apples, sugar and spices to a small saucepan.
    1 ½ cups (210 g) apples peeled and diced into ¼ inch pieces, 2 tablespoon (25 g) granulated white sugar, ½ teaspoon ground cinnamon, ⅛ teaspoon ground nutmeg, ⅛ teaspoon ground ginger, pinch cloves
  • Heat over medium-low heat, stirring occasionally, until the apples are tender, about 15-20 minutes. Then let cool completely.

For the Streusel

  • Preheat the oven to 350 degrees.
  • Add the flour, brown sugar and butter to a small bowl. Smoosh everything together with your fingers until the mixture forms small crumbles.
    2 tablespoon salted butter, ¼ cup (55 g) brown sugar, packed, ¼ cup (31 g) all-purpose flour, spooned and leveled
  • Transfer the streusel topping to a small parchment paper lined baking sheet and bake for 12-15 minutes until light golden brown. Stir half way through to ensure it bakes evenly. Then let cool completely.

For the Cracker Tofeee

  • Preheat oven to 350 degrees if not still preheated. Line a large baking sheet with parchment paper and spray with non-stick spray. (You can also use a silicone baking mat.)
  • Arrange the crackers on the baking sheet in a single layer.

  • Add the butter, brown sugar and vanilla to a small pot. Bring to a simmer over medium heat, then simmer for 5 minutes.
    1 cup (224 g) salted butter, 1 cup (220 g) brown sugar, packed, 1 teaspoon vanilla
  • Pour the brown sugar mixture over the crackers and spread it in an even layer with a mini offset spatula. Bake the toffee covered crackers for 5 minutes in the oven.
  • Remove from the oven and sprinkle the chocolate chips over the crackers. Return to the oven and bake for 3 minutes, or until all the chocolate is melted. Spread the chocolate evenly across the crackers in a single layer with a mini offset spatula.
    2 ½ cups (500 g) semi-sweet chocolate chips
  • Sprinkle the cooled apples, streusel and pecans over the melted chocolate layer. Then place in the fridge for 30 minutes, or until the chocolate and toffee are hardened.
    ¾ cup (84 g) whole pecans
  • Drizzle melted chocolate over everything and return to the fridge for 5-10 minutes until the chocolate is set.
    ¼ cup (50 g) semi-sweet chocolate chips, melted for drizzling over finished cracker toffee
  • Then cut or break apart the cracker toffee into smaller pieces. (I like to do 3-4 inch pieces, but you can also break it into bite-sized pieces if you want!) Then serve!
