Ingredients

- Sugar- we're using In The Raw trubinado sugar to sweeten these mini pies and to sprinkle over the crust
- Flour- all-purpose flour is used for the flaky, all-butter crust
- Butter- make sure it's extra, extra cold
- Water- for the pie crust, can also use vodka or bourbon for an even flakier crust
- Strawberries- I recommend using fresh strawberries for the jam instead of frozen
- Vanilla- adds a sweet note to the jam
- Cornstarch- used to thicken the strawberry jam
- Egg- used for the egg wash

Step By Step Instructions

STEP ONE: To make the strawberry filling, add quartered strawberries to a pot. Sprinkle in sugar, cornstarch and vanilla, then stir to combine.
STEP TWO: Cook the strawberries for 20-30 minutes, or until they're thick and a jam like consistency. (Mash the strawberries as they cook.) Transfer the jam to a bowl and allow it to cool completely.


STEP THREE: To make the pie dough, combine flour, salt and sugar in a food processor.
STEP FOUR: Add in cold butter pieces slowly while the food processor is running. Pulse until all is combined.


STEP FIVE: Add in water/vodka/bourbon 1 tablespoon at a time until dough pulls away from the edges.
STEP SIX: Divide the dough in two, form into disks and wrap tightly with plastic wrap. Chill the dough for 30 minutes to 1 hour, or until it is no longer sticky, and is easier to roll out.


STEP SEVEN: Roll dough out into a 9 inch circle, about ¼ inch thick.
STEP EIGHT: Cut the dough with a 4 inch heart cookie cutter. Repeat with the other dough disk. Re-roll dough scrapes out and cut out additional hearts. You should be able to get about 22 hearts out of the dough.


STEP NINE: Line a large baking sheet (15 x 21 in) with parchment paper, or two 13 x 18 in baking sheets. Transfer 11 of the dough hearts to the baking sheet. Spoon about 1 tablespoon of filling onto 11 of the hearts, leaving a small boarder around the edges.
STEP TEN: Brush the boarders with egg wash and place another dough heart over top. Press boarders closed with a fork. Cut a small X on the top of each hand pie. Chill the hand pies on the baking sheets for 20 minutes before baking.


STEP ELEVEN: Brush the tops with egg wash and sprinkle with turbinado sugar.
STEP TWELVE: Bake the hand pies for 18-23 minutes, or until golden brown. Let cool for 15 minutes, then enjoy. Serve the mini strawberry pies as is, or with vanilla ice cream!

Pro Tips
Make sure your butter is extra cold. This will yield the best pie crust. Chop butter in small cubes, and freeze for 10 minutes to make it extra cold!
Try using vodka or bourbon in the pie crust. It might sound strange, but using alcohol instead of water will yield a much flakier pie crust! As the dough bakes all the alcohol, unlike water, evaporates leaving behind a super flaky crust.
Be sure to chill the hand pies before baking. This will ensure the jam doesn't leak out, and the dough stays intact while baking.

FAQs
Do I have to cut the dough into hearts? Of course not. You can cut the dough into circles, or really any other shape. To keep baking times the same, I recommend sticking with the same size cookie cutter, 4 inches.
How long will these stay fresh for? They will stay fresh for up to three days in an airtight container.
Can I use store bought jam? Of course!
Can I use store bought pie crust? You can, but baking times will vary. I would start with 18 minutes and add time as necessary. (This recipe has only been tested using homemade pie crust.)

Easy Strawberry Hand Pies
Ingredients
For the Strawberry Jam
- 2 cups (300 g) strawberries, trimmed and quartered
- ¼ cup (55 g) turbinado sugar Sugar In the Raw
- 2 teaspoon (5 g) cornstarch
- 1 teaspoon vanilla
For the Crust
- 2 ½ cups (312 g) all-purpose flour
- ½ teaspoon salt
- 2 tablespoon (28 g) turbinado sugar Sugar In The Raw
- 1 cup (224 g) unsalted butter, cold
- 3-4 tablespoon cold water can also use vodka or bourbon
For Topping
- 1 egg for egg wash
- extra turbinado sugar for sprinkling Sugar In the Raw
