
This recipe is for the best lemon tart. The crust is made out of ground Golden Oreos. It’s filled with a a creamy lemon custard like filling. It uses lemon juice, lemon zest and lemon extract to really give it a great zest lemon flavor.

Golden Oreo crust, need I say more? In my opinion Golden Oreos are the best and they make the perfect crust for the lemon filling. Cream cheese, heavy whipping cream and sweetened condensed milk work together to make the lemon filling extra extra creamy.
The filling is silky smooth and the Oreos add a nice crunch. It’s the perfect combination. This tart is also super easy to make. You can easily whip it up in 20 minutes!

Ingredients for this Lemon Tart
- Lemon juice- I recommend using fresh lemon juice for the best flavor
- Lemon zest- adds an extra lemony punch
- Cream cheese- makes this tart extra creamy, make sure it is softened to room temperature
- Egg yolks- make sure these are room temperature as well
- Sweetened condensed milk- they key to the perfect lemon filling
- Heavy cream- adds just another level of creaminess to this tart, make sure it's room temperature
- Lemon extract- I use Taylor & Colledge's lemon paste
- Golden Oreo's- get ground for the curst

Step by Step Instructions
STEP ONE: Preheat oven to 350 degrees. Remove the filling from 15 Golden Oreos. Add them to a food processor and pulse them until they are finely ground. Add in ¼ cup of melted, unsalted butter and 2 tablespoon of granulated sugar. Pulse to combine.
STEP TWO: Press the crumbs evenly on the bottom and up the sides of an 8 inch pan. It helps to use a ¼ cup measuring cup or a spoon to do this. Bake the crust at 350 degrees for 8 minutes and then let cool completely while making the filling.
STEP THREE: In a small bowl mix 2 oz. of softened cream cheese with an electric mixer until it is completely smooth. Then mix in 2 egg yolks. Next add in 7 oz. of sweetened condensed milk and combine. Then add in ¼ cup of heavy cream and ¼ cup of lemon juice and mix until completely combined. Lastly mix in 2 teaspoon of lemon extract and ½ teaspoon of lemon zest.
STEP FOUR Pour the filling into the prepared tart crust.
STEP FIVE: Bake the tart for 16-18 minutes at 350 degrees. The center will be slightly jiggly still.
STEP SIX: Let the pie chill on the counter for 15 minutes and then in the fridge uncovered for at least 6 hours or overnight before serving.
STEP SEVEN: Top with fresh berries if you desire and serve!












Note: The key to making the perfect filling is making sure to mix the cream cheese until it’s completely smooth. Then when adding each ingredient to mix until each is fully combined.

FAQs
Can I use store bought lemon juice? Yes but fresh squeezed always tastes better.
Can I use something else other than Golden Oreos? Yes absolutely. A good replacement would be graham crackers, or digestive biscuits.
Can I leave out the eggs? No, the filling is essentially a custard, and it won’t bake properly without the eggs.
Can I use low fat cream cheese? No I would not recommend it. Full fat ingredients are what makes this tart filling silky and creamy.
Pro Tips
Make sure to blend every ingredient at each step before adding the next ingredient in. This ensures that the filling will be the perfect consistency
Do not cover the tart with plastic wrap or aluminum foil as it chills. The top of the tart will stick to the plastic wrap and won’t look pretty! Instead store it in a cake carrier or large Tubberware that is deep enough so the lid won’t touch the tart. Additionally you can just leave it uncovered.

Storing
Store left overs in an air tight container in the fridge for up to three days. It’s best served chilled in my opinion!
