This white chocolate salted caramel cheesecake is silky smooth, and the perfect balance of salty-sweet.

Gather your ingredients

Start by making your crust. Pulse together graham crackers and pretzels. Mix in melted butter and sugar. Add in eggs and vanilla and mix until pale in color. Press the crust onto the bottom and about an inch up the sides.

Mix the cream cheese, corn starch and sugar together.

until everything is smooth and there are no lumps.

Add in the vanilla bean paste, sour cream white chocolate.

Add the eggs and egg yolks one at a time to the cheesecake batter.  Do not over mix the batter. Pour the batter into the prepared pan with the crust.
