Lemon Strawberry Jam Cake

Cream together sugar and butter in a large bowl

Whip in egg whites, lemon extract  and lemon zest.

Add in flour, baking powder, baking soda and salt, then combine.

Divide the batter evenly among the cake pans and bake.

Fill each layer with lemon cream cheese frosting. Pipe a boarder of frosting onto each layer.

Fill each layer with strawberry jam.

In Bloom Bakery

Frost the outside with lemon cream cheese frosting and smooth with a cake scraper.

In Bloom Bakery

Swirl jam into the outside of the frosting, and top the  cake with more jam.
